Dancing Bears Pure Honey

 

Since our farm is certified organic and borders the St. John’s arboretum, our honey bees draw their nectar from organic surroundings. Honey has long been recognized as having health benefits, and its also used in many beauty treatments, including some of our own handcrafted soaps.  Honey is the perfect ingredient for your recipes -- it contains vitamins and antioxidants, but is fat free, cholesterol free and sodium free!  Research has shown that unlike most other sweeteners, honey contains small amounts of a wide array of vitamins, minerals, amino acids and antioxidants. Honey, a rich source of carbohydrates, provides a quick source of energy.

 

Honey naturally tends towards crystallization. The flowers from which bees harvest nectar and the more than 180 other minerals, acids and proteins that can be in honey each have some effect on crystallization. Crystallization is easy to fix and it does not mean the honey has spoiled. Simply heat honey container in water that has been heated to about 140 degrees until the honey is completely liquefied.

 

Maple Syrup

 

We have a sugar shack and maple woods that provide maple syrup we harvest and process in the early Spring. Our maple syrup is cooked down the old-fashioned way over a wood fire.  Pure maple syrup does not contain any additives or preservatives and will get moldy if not refrigerated after opening. Mold will sometimes appear on the surface of unopened maple syrup even of the highest quality. The mold is not toxic to humans and many simply skim the mold and enjoy the syrup - if you prefer, heat up the syrup after skimming mold to kill any remaining mold and then refrigerate. Unopened containers will keep 3 years or more stored in a dark, cool place. Opened containers must be kept in the refrigerator and will keep up to 1 year.
